What is the World Gourmet Summit?
Only the most anticipated, premier haute food and wine festival in Asia? Think a major food festival featuring only the best of what the culinary industry has to offer – eat and drink with a load of pizzazz.
This event has been bringing its A game since 1996, providing Gold Standard gastronomic experiences that attract many far and wide to get a taste of Singapore’s culture through their bellies. As an internationally recognised festival, the WGS has been granted 55 awards in the annual International Festivals and Exhibitions Association (IFEA) ceremony in the United States of America since 2000.
This festival is organised by Peter Knipp Holdings and is proudly supported by the Singapore Tourism Board.
The pandemic might’ve thrown off everyone’s way of life, but it is in this we treasure how far we have come and how much more the future holds, if we hold on together. (Pat on the back if you got the Diana Ross reference.)
The WGS is back again this year with the theme: Remastered. In their words? It means to combine new and old, “to revisit our old favourites, to make things wholly new again, and to merge innovation with nostalgia and what works. It’s everything you love, but remastered.”
World Gourmet Awards 2021
The World Gourmet Awards (WGA) was first launched in 2001 to complement the WGS in celebrating and honouring the efforts of key players in the industry who has helped deliver stellar dining experiences to its guests. The WGA is highly regarded as the most esteemed recognition in Singapore’s culinary world.
Here is founder of the World Gourmet Summit, Peter Knipp, giving a speech before the commencement of the 2021 awards ceremony.
Today, the F&B Industry is still doing its best to survive despite much of Singapore being locked down due to Covid-19. As a result people are scared about what will happen in their future but there’s nothing stopping these 36 award recipients this year from proving that hard work does indeed pay off.”

This year, 36 food and beverage establishments, chefs, sommeliers and restaurant managers were recognised for their outstanding culinary standards. The Finder’s very own Designer Vanessa Tan, was also able to attend and witness the award ceremony held at One Farrer Hotel on 5 July 2021. The ceremony was held in accordance with the Singapore’s Safety Management Measures.
Some notable key award recipients of the event include: Chef Aziza Ali (Indoguna Singapore Lifetime Achievement Award), Chef Benton Toh (USA Rice Federation Chef Mentor of the Year), Spa Esprit Group (MEIKO GREEN Waste Solutions Green Initiative Award) and Oliver Truesdale Jutras from Open Farm Community (Q Industries Green Initiative Award (Individual)).

3. A heritage dinner plus special culinary collaborations with local private dining chefs
Stay tuned for a collaboration with popular local private dining chefs – such as the Pasir Panjang boys, Annette Tan, Sarah Benjamin, Bryan Koh and Sandra Sim. Renowned Chef Kong Kok Kiang is also said to prepare a heritage dinner, as well. Stay tuned for more details here.
WGS x USA Cheese Guild Special Menus:
Head over to Shabestan for a special 5-course cheese curated menu that’s beautifully paired with a stellar wine selection. Prepared by Executive Chef Hany Moustafa, start with the Grilled Eggplant with US Mozzarella Cheese Salsa Bruschette (paired with the Ixir Grande Reserve White) and Cheese Appetizer Platter (paired with Ropiteau Chablis). Then, move on to our personal fave – Lamb Meatballs stuffed with US Sharp Cheddar Cheese (paired with the Auswan Creek Golden Bull Shiraz).
Stuffed pie lovers will love its Spinach US Cream Pie (paired with Toi Toi Pinot Gris), while the US Mozzarella Cheese Kunafe (paired with Graf Johann IV Riesling Halbtroken) will leave you satisfied without the post-sugar rush.

2. Hua Ting Restaurant
Enjoy the flavours of East-meets-West at Hua Ting Restaurant with a 6-course menu that features Cantonese cuisine with a Western twist. Created by Hong Kong Masterchef Chung Lap Fai, this menu aims to impart Cantonese cuisine to a new generation of diners through the usage of cheese. Begin the meal with a starter of Tomato and Mozzarella Mille-Fuille and Duck Skin on Corn Crispy Bread (served with Cherry Blossom Vinegar and Scallion Pesto). We especially love the Golden Pumpkin Soup with Oaxaca Cheese Espuma, a sweet and creamy soup that is perfectly balanced.
Other show-stoppers include the Sautéed Boston Lobster with Celery, Garlic, Capsicum (topped with Sharp Cheddar Cheese) and the Seared Boneless Beef Short Ribs with Gorgonzola Cheese, Purple Onion and Pink Himalayan Salt.

Saunter down to MOONBOW for a carefully curated 4-course cheese menu showcasing European fusion dishes using USA cheeses, specially prepared by Iron Man Chef Heman Tan.
To start, expect a sweet-and-sour kombu-infused Watermelon & Pear Tartar. It’s served with lemon lime sorbet and gooseberry gouda cheese sauce and cheese foam. Next, the Duo of Cheese Ball – as its name implies – features two cheese balls of contrasting tastes. The Black Olive 4 Cheese Ball overloads with cheese, while the fried Arancini Rice Ball includes fresh mozzarella cheese and furikake and is more on the savoury side – our personal fave.
The star of the show is the scrumptious Black Silkie Poulet that’s sure to whet your appetite. Chef Heman uses one of the world’s most expensive chickens – the Black Silkie Chicken – with Food For Friends sharp cheddar cheese and pepper jack cheese, button mushroom, foie gras and veal jus. Then end your meal with the melt-in-your-mouth Cloudy 74% Dark Chocolate Burnt Cheese served with blood orange sorbet, candy floss, burnt sabayon, and beehive apple walnut smoked cheddar shavings.
